FOOD MICROBIOLOGY COURSES

Education in food microbiology focuses on detecting and controlling microscopic organisms in order to make food safe for human consumption. Individuals interested in this area can enroll in food microbiology courses, which are offered at many universities. Food Microbiology courses  will provide insight on the ecology of microorganisms in foods, detection, and enumeration, isolation, and identification methods for food-borne pathogens, toxins, and contaminants that may occur in a food plant environment. Courses will combine classroom lectures with laboratory environment on the fundamentals of food microbiology and foodsafety.

Courses in food microbiology are available as individual, professional advancement courses that focus on food processing, as well as through bachelor's, master's and doctoral degree programs in nutrition and food science. Graduates of such degree programs often earn a Bachelor of Science (BS) in Food Science, Master of Science (MS) in Food Science or Doctor of Philosophy (PhD) in Food Science. Depending on the institution, students interested in earning a master's degree may need to possess a bachelor's degree in the field; those wishing to earn a doctoral degree may be required to hold a master's degree in the field.

Underlying microbiological science will be discussed as well how the food industry uses that information in technologies and strategies for provision of safe, wholesome and enhanced foods that match consumer expectations.  Specific topics include: microbial fermentations and biotechnological applications for foods; spoilage processes and food processing technologies; microbial hazards associated with foods and their physiology and mechanisms of virulence; and current approaches to food safety assurance including HACCP, risk assessment and predictive microbiology.
